The next-level burger you’ve been waiting for has arrived in Roseville.

Eureka!, founded in 2009, is Roseville’s newest upscale burger restaurant specializing in American classics, including gourmet pub food and a wide selection of craft beers, wines and whiskeys.

The new restaurant opened mid-November in the Highland Village shopping center in Roseville.

You may not be able to pick just one item from the starters menu – they’re just that good. Pick from deviled eggs, Mac N’ Cheese Balls, Osso Buco Riblets, Lollipop Corn Dog and Truffle Cheese Fries.

The menu, including the burger section, reflects the restaurant’s belief in partnering with regional purveyors for its ingredients.

Some of the burger offerings include a 28-day, dry-aged beef, bison, bone marrow and a cowboy burger with shoestring onion rings, bacon, cheddar and beer barbeque sauce.

Eureka! also serves up several gourmet sandwiches, like the Butcher’s Steak Dip, Napa Chicken, Fried Chicken Sliders and Rib Eye.

The restaurant invites its customers to enjoy its craft brewing and small-batch distillation in its beer and bourbon bar. The premium craft drinks and whiskeys are handmade and are derived from natural liqueurs and fresh fruits.

Eureka!, a Southern California-based chain with 20 locations in California, also serves brunch.

This restaurant reaches the high standard set by culinary leaders across Placer County. Many of the ingredients, from produce to hops, are grown nearby. Much like many restaurants that take advantage of the abundance of in-season ingredients, Eureka! follows suits in offering and unique and exciting dining experience.
